Last week, I was fortunate enough to visit La Cofradia, a renowned tequila distillery in Jalisco, Mexico (NOM 1137), where Cinco de Mayo Tequila is crafted. I had the chance to speak with master distiller Don Carlos Hernández. I’ve been to Tequila many times and have toured a good share of authentic Mexican distilleries, but walking through those beautiful grounds—shaded by mango and avocado trees—still felt like both a mystery and a revelation.


La Cofradia sits on the outskirts of town, nestled on the slopes of the Tequila Volcano, with stunning views of the volcano and the surrounding blue agave fields.

This historic tequila distillery has been operating for decades, proudly carrying the weight of tradition and legacy. Touring with experts is always a learning experience—and a reminder of the labor, dedication, and craftsmanship required to transform a resilient plant into a premium tequila.   • Use of mineral-rich spring water from the Volcán de Tequila
  • Fermentation using yeast derived from the agave itself, preserving the integrity of the tequila-making process
  • Open-air fermentation pots located near fruit trees, enhancing the complexity of the spirit’s aromas and flavors
  • As is customary in most tequila tours, I sampled the high-proof tequila straight after double distillation. I was struck by the richness and depth of flavor in this “raw” spirit. Under Don Carlos’s guidance, this tequila is transformed into the Cinco de Mayo blanco, reposado, and añejo expressions you’ll find in stores and restaurants across the U.S.

Spending the day at La Cofradia is highly recommended for anyone seeking an immersive tequila experience. You’ll learn about traditional tequila production, stroll along paths paved in obsidian from centuries of volcanic activity, breathe in the shade of mature trees, and explore their on-site tequila museum.
